I am always looking for new recipes...........
FEIJOA CHUTNEY :heartskip
1 kg Feijoas, wiped, ends trimmed and finely sliced.
500g onions finely chopped.
300g raisins } Both coarsely
500g pitted dates } chopped
500g brown sugar
1 Tbsp ground ginger
1 Tbsp curry powder
1 tsp ground cloves
½ tsp cayenne pepper
4 tsp salt
4 cups malt vinegar
Combine all ingredients in a large saucepan, bring to the boil and cook very gently for 1½ - 2 hours, until the chutney is thick. Make sure it doesn’t catch on the bottom of the saucepan.
Pour into hot clean jars and seal.
This Chutney is yummy...............:thumb:

Spanish Sausages
1 kilo Sausages
2 tablespoons Brown Sugar
Bacon
1 small cup of tomato sauce
Boil sausages to remove fat, skin and wrap each one in a piece of Bacon. Put into a casserole and cover ithe brown sugar and tomato Sauce. Bake for half hour at 150 degrees... yummy serve with vegetables or salad...

4 egg whites.
2 cups sugar.(castor)
2 heap teaspoon corn flour.
1 teaspoon vingar.
4 tablespoons boiling water,
put all ingredients in a bowl. boiling water last.mix on high speed for 10 minutes.place mixture on grease proof paper and bake in mod oven (120c) for 1&half hours. top with strawberrys & cream yummy

Peanut Sauce,
1 onion chopped finely,
oil
garlic as much as you like crushed or none if you are not into garlic
1 can of coconut milk
1 tablespoon Brown sugar
1 - 2 tablespoons of Crunchie Peanut Butter
1 teaspoon Curry Powder
Heat oil in pot and heat add curry powder then add onion and garlic. Saute onion then add coconut milk until hot and stir in sugar and Peanut Butter. Simmer until sauce is thick and have with anything you like. I like it with chicken or steak..

Spiced Chops
6 Chops
2 tbs Brown Sugar
2 tbs Flour
1/2 Teas Curry Powder
1/4 teas mixed spice
2 tbs vinegar
1/4 teas ground ginger
1/2 teas mustard
1 teas salt
pepper
1 1/2 cups of water
2 tbs Sherry
Trim fat off chops, place in a casserole, mix remaining ingredients together. Pour over the chops and marinate for 2-3 hours. Cover casserole. Bake for 2 hours at 350 degree F ( 180 C) . Serve with hot vegetables
It is yummy and good on a cold winters night

Basic Easy Cornflour Sponge
4 Eggs
3/4 Cup Castor Sugar
1 Cup Kream Cornflour
1 Teas. Crm of Tartar
1/2 Teas Bi-Carb Soda
Kream cornflour is the best one for this recipe youll get a better rise than the other brands, Its in an Orange box..
Beat eggs and sugar till resembles thick cream around 5 minutes then add SIFTED dry ingredients, and FOLD in ... don't stir or beat it:jab:
You can Add, coffee dissolved in a little hot water [last] or cocoa sifted with other ingredients...for variety
Two tins and moderate oven..around 20 minutes.. doesn't look much mixture but rises well..
Split both cakes and use small carton of cream to fill ...laced with kahlua to taste:D
Ice top and sides with:
1 Teas melted butter /margarine, 1 Teas Cinnamon, 3 Teas Cocoa and 1 cup of Icing Sugar, vanilla essence to taste.
Decorate with whole Walnuts
If you want a richer variety cream the top and sides as well.. instead of icing.. Let stand a wee while for the kahlua flavour to penetrate.

Rich Christmas Cake..
250 grms Standard Flour
1/2 Teaspoon Baking Soda
1 1/2 Teaspoons Mixed Spice
1 teaspoon Ground Cinnamon
250 grams Soft dak Brown Sugar (The Darker the better)
250 grams butter.
2 Tablespoons of Honey
1 kilo mixed fruit
125g apricots (Dried)chopped
125g glaced Cherries
60 grams mixed peel
125gm walnuts chopped
( I also add to this recipe dried chopped pieces of pineapple, pawpaw, and mixed nuts)
6 egg whites
1/3 cup brandy or port
2 tablespoons sweet sherry
Sift combined flour, soda and spices.
Cream sugar and butter untill well combined and then beat in honey.
Combined fruits, peel and nuts. then add them to the flour mixture and combine well. (that the fruit is well covered with flour. This stops the fruit from dropping to the bottom of the cake)
Whisk egg yolks lightly and fold into creamed mixture.
Whisk egg whites until they stiff.
Stir in one third of the flour and fruit and mix well then add one third of the sherry and stir and then add one third of eggs yolks.. Carry on with this until all have been mixed in.
Place mixture in a lined 25cm square tin lined with baking paper and brown paper.
Cook in a slow oven at 150 degree C for 2 to 2 1/2 hours.
When cold prick all over and pour brandy or sherry or rum and leave for a bout a day before eating it....

250g Marshmallows
1/2 Cup Peanuts [chopped]
1 Cup Sultanas
1 Cup Glace Cherries [chopped]
60g Copha
250g Chocolate melts.[ I use Cadbury Dairy Milk]
Line a Lamington tray with foil.
Cut Marshmallows in half, and line bottom of the tray.
Sprinkle sultanas,nuts,and cut cherries over marshmallows.
Melt copha and chocolate together, stir well to combine and pour over mixture in tray.
Refrigerate to set..
Guarantee one piece won't be enough ....so don't invite Maxie to visit and you won't have to share:brow:

Easy YUMMY toasted muesli with NO FAT and made in MICROWAVE(!000watt)
1/4 cup chopped walnuts
1/4 cup crushed nuts
2cups rolled oats
1/4 cup coconut
1/4 cup wheatgerm
1/4 cup brown sugar
1/4 cup honey (or golden syrup works too)
Heat rolled oats on High 1.5mins,stir, 1min stir, 1min,stir. Add nuts, c/nut, w/germ ,mix in honey evenly - cook on hi 2min, stir, 2 min, stir - add sugar.
Cook on hi 1min,stir, 1 min , stir. Add in a few chopped dates and 1/4 cup mixed dry fruit. Stir occaisionally while cooling. Smells and tastes like ANZAC biscuits !!

Scones,
3 cups of flour,
3 teaspoon Baking Powder
250 grams butter
200 grams Dates
200 grams Crysalised ginger.
warm milk to mix
Place flour, baking powder and butter in bowl.. Rub in butter untill crumbly, chop up dates and ginger roughly, add to flour mixture and fold in..then add some of the milk and fold in and add more milk if need. The mixture should be like a tacky bread mixture... Spoon on to greased oven tray and cook for about 1/2 hour at 200 degree.
The trick with scones is that you don't handle them too much...

CARROT CAKE
3/4 cup veg oil
2 eggs
1 cup caster sugar
1teaspoon vanilla
1 cup light wholemeal flour
1 teaspoon bi-carb
1/2 teaspoon salt
1 1/2 cups grated carrot
1/3 cup chopped walnuts.
Beat eggs, oil, sugar and vanilla until combined. Add flour, bi-carb, spice and salt- mix well. Add carrot and walnuts (Do NOT be alarmed that mixture looks runny and ugghy at this point!!) Put in greased and lined loaf tin and cook at 180 - 190 oc for 45 to 55 mins. Ice with lemon frosting (using cream cheese is nicest) and sprinkle with a few chopped walnuts.
This is best version of carrot cake I have ever made.

Very Rich Chocolate Slice
1 cup caster sugar
1/4 cup orange liqueur
1/4 cup freshly squeezed orange juice
350 grams dark chocolate, roughly chopped
250 grams butter, diced (unsalted butter is best)
4 X 70 gram eggs, at room temperature
1/4 cup flour, sifted (or use ground almonds)
2 tblsp cocoa, sifted
Method
1. Put half the sugar and orange liqueur into saucepan and stir over a low heat until the sugar has dissolved. Add the chocolate and stir over a double saucepan or very, very low heat until melted. Remove from the heat and stir in the butter. Cool to lukewarm.
2. In a clean bowl, whisk the eggs with the remaining sugar for about 8-10 minutes or until very pale and thick. Lift the beaters from the mixture and make a figure 8. If you can still see the figure 8 once made, the mixture has been beaten sufficiently. If not continue.
3. Fold the cooled chocolate mixture into the beaten egg mixture. Once half mixed sift over the flour and fold gently. Transfer to a greased and paper-lined 23cm round cake tin.
4. Bake in a water bath at 180 degrees Celsius for 1 hour or until the cake is firm to the touch. Remove from the water bath and leave to cool. Invert on to a serving platter and garnish as wished.
5. To accompany Dark berry-fruit puree, such as blackberries or canned cherries is wonderful here. Or try orange segments tossed in caramel. :w7:

Devilish Double Chocolate Fudge Muffins
125 grams dark chocolate
1/4 cup cream
2 1/2 cups flour
1/2 cup cocoa
1 cup caster sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 eggs
3/4 cup non-fat plain yoghurt
1/4 cup cream
1 cup milk or water
100 grams butter, melted and cooled
Method
1. Break the chocolate into pieces and place in a heatproof jug with the cream. Microwave for 1 minute on high or until the chocolate has melted. Stir well and leave until cool enough to roll into 12 even shaped balls.
2. Sift the flour, cocoa, sugar, baking powder, baking soda and salt into a bowl and make a well in the centre.
3. In a jug blend together the eggs, sour cream and milk. Blend into the dry ingredients and fold in the butter as you go.
4. Half fill 12 well greased muffin tins with the mixture. Place a chocolate fudge ball in each and top with the remaining muffin mix.
5. Bake at 220 degrees Celsius for 15-18 minutes until well risen and cooked.
6. Cool in the tin for 5 minutes before dusting with icing sugart to serve.

For those who like homemade Irish Cream
3 eggs well beaten
300 mls of cream
1 tin of condensed milk
1 to 1 1/2 cups of whiskey or brandy
1 cup of coffee: To hot water add 3 -4 teaspoons of coffee essence or instant
2 teaspoon coconut essence
1 tablespoon of milo or drinking chocolate
Beat well. Put into bottles and cool then drink it.....:brow: :16wink:

Tomato Sauce
3 medium-sized cooking apples
3 medium-sized onions
2Kg (4lbs) ripe tomatoes
2 1/2 cups malt vinegar
1 clove of garlic crushed
2 tablespoons salt
2 cups sugar
1/2 teaspoon cayenne pepper
1 teaspoon whole allspice and 1 teaspoon whole cloves
peel and core apples,chop roughly.
peel and chop onions and chop tomatoes.
put all in saucepan,stir in vinegar and garlic.
cook for one hour on low heat.
pour through strainer,pushing mixture through with the back of a spoon.
return mixture to saucepan and stir in salt sugar and cayenne.
tie cloves and allspice in a piece of muslin and add to pan
simmer stiring occasionally, for another 45 mins,or untill thick.
remove muslin bag, pour sauce into warm,sterilised jars and seal.
Chilli Sauce
4kg(8lbs)ripe tomatoes
2 large onions chopped
1/2 teaspoon cayenne pepper
1/2 cup sugar
1 table chopped green ginger
2 cups brown vinegar
2 teaspoons salt
1/2 teaspoon ground cloves
1/2 teaspoon cinnamon
1/2 teaspoon mixed spice.
5 dried red chillies,chopped
place chopped tomatoes,onions cayenne pepper,sugar,ginger and
chillies into a large saucepan and boil untill thick,stirring
now and again.press through a sieve or pulverise in a blender
or food processor.return to saucepan and stir in all remaining
ingredients bring to boil then simmer for 15 mins bottle in clean warm sauce bottles
Apple Chutney
2kg(4lbs)cooking apples
250g(8oz)whole onions
1 medium-sized green or red capsicum
2cloves garlic crushed
5 cups brown malt vinegar
314 cup raisins chopped
1 cup sugar
i tablespoon dry mustard
3 teaspoons ground ginger
1 tablespoon salt
1/4 teaspoon cayenne pepper.
peel,core,chop apples finely,peel onions chop finely
but into saucepan.dice capsicum add to apples and onions add garlic and vinegar
simmer untill soft.
add raisins with remaining ingredients and cook gently,stirring occasionally until thick.
turn into warm jars and seal.

BEEF STROGANOFF
SERVES 4
500g beef strips
2 onions-diced
10 mushrooms-thinly sliced
1 chicken stock cube-crushed
2 cloves of garlic
2 tablespoons of flour
500g double cream-or thickened cream-or sour cream
cold water
margarine or butter
If you have an electric frypan that is perfect for this recipe-if not use a large saucepan. Over a low heat put a good tablespoon of margarine let it melt a little and then add the diced onions, sliced mushrooms, garlic-crushed and crushed chicken stock cube, stir well-keep ingredients moving-if there is not enough liquid in the pan add more margarine, you do need a fair bit of liquid for when you add the flour. When the onions are translucent add the beef strips, keep stirring and cook over low heat until the meat is cooked. It is a good idea if someone helps you at this stage, if that is not possible then turn the heat down as low as it can go or remove the saucepan-if using one-from the heat. Add the flour a little at a time, but it is really important that you stir it in really well the whole time. Once that is added in put it back on the heat and stirring let it cook for about another five minutes. Now use your helper again or remove from heat, add the COLD water a little at a time stirring really well-while it is being added and between each addition so there are no lumps. I didn't put an amount for how much water because it differs. You want to add enough cold water to make a rich thick consistency-so it runs of your spoon in an even drizzle. Now turn the heat up to a medium heat-so that it thickens slightly, but you must stir it every so often other wise it will stick. After about fifteen minutes turn the heat back down and then add the cream, stir in well and let it heat through. I love to serve this on top of steamed white rice. YUM!!!!!!!!:hyper:
Oh I forgot to add that when you add the flour it should all go crumbly and kind of stick together, don't worry this is perfectly normal.

EASY CURRIED SAUSAGES
6 sausages
2 onions
1 chicken stock cube
1 cup frozen mixed vegies
2 tablespoons flour
2 cloves garlic
curry powder
COLD water
margarine
Place the sausages in a saucepan of water and put on the stove on high. When they boil turn the heat off and immediately run the sausages under cold water to stop them cooking any further. In an electric frypan or saucepan on a low heat start to melt the butter, just as it is about halfway through melting add the diced onions, crushed chicken stock cube, crushed garlic, and enough curry powder for your liking. Cook until the onions are translucent. While they are cooking remove the skins from the sausages-which will just slide off and then slice the sausages, put aside. Add the frozen mixed vegies to your pan and stir until cooked, then add your sausages and stir through. Now add the flour a little at a time stirring really well, it should go all crumbly and kind of stick together, cook for a further five minutes, stirring the whole time. Now slowly add the water a little at a time, stirring the whole time and between each addition. It should go reasonably thick but you can make it as thick or thin as you like, just add more water for a thinner consistency. Cook until heated through over a medium heat. I also serve this on a bed of steam rice.YUM!!!!!!!!!!!!!!:MISSIN~18

Old Fashoned Brown Sugar Spice Cake
1/2 cup melted butter
2 cups brown sugar
1 3/4 cups plain flour
1 teaspoon b.carb soda
3/4 cup butter milk
3 teaspoons cinnamom
3 teaspoons ginger
1 teaspoon nutmeg
1/2 teaspoon cardomin
pinch of salt
2 eggs well beaten
Add sugar sifted flour spices salt to mixing bowl
mix b.carb soda in butter milk add to mixture
stir in with spoon then add beaten eggs then melted
butter mix well.
Line dish with paper put ingredients on mixer to finish.
It is a runny batter. Cake is rather rich and sticky when cooked.

For this recipy you will need Caruba,Coke,Ice and a glass:thumb:
Pour rum into glass (3 parts rum and just the 1 glass will do)
Add Coke and Ice (1 part coke and 3 ice cubes)

Kaklua ( Coffee Liqueur)
5 cups of water
3 Cups Sugar
1 Cup Brown ugar
2 vanilla sticks
12 ozs Bushells Coffee Essence
40 oz of Vodka
Boil water and suger for 2 mins. Add essence and boil for 1 minute. Let cool and add vanilla sticks and vodka. Keep it a month or longer...preferably before drinking.....:w7: :w7:

Cream butter and sugar. Add eggs and beat well. Gradually add flours and mix well. Roll into balls. Cook on greased trays for 10-15 minutes in 180C oven until goldenin colour.
Decorate before cooking with :-

Choc Chips
100's & 1000's
Cherries or Almonds
Jam
Or mix in a little Peanut Butter...
also Custard Powder and make custard Icing for filling...whatever you prefer
Butter Chicken
Chicken breast cubes
1 Onion..finely chopped
1 Tspn garlic
1 1/2 tspn Garam Marsala
Cinamon...sprinkle
Tomato Paste...150ml
Cream 300ml or Yoghurt
Fry chicken and onions in a little oil until chicken is nearly cooked
Add garlic..stir
Add Tomato paste, Garam Marsala & cinnamon.
Stir well until chicken is coated. Turn off heat then add Cream.
Stir well until sauce is an even colour ans season with Salt and Pepper
Serve with Rice and Naan Bread

Grog Fruit Salad
______________
1 large can pineapple
1 large can peaches
1/2 lb sultanas
1/2 lb raisins
1/2 lb prunes
1 cup brandy
Drain and chop peaches and pineapple. Put dry fruits in tinned syrups with 1/2 cup brown sugar and simmer 20 mins. Cool, add brandy and tinned fruits. Store in covered container for 14 days. Clear house of all other human beings and then eat with icecream!!!!

Strawberry Chocolate Boxes
1 lb semisweet chocolate
1 recipe Whisked Sponge Cake made with 3 eggs, 1/3 cup (3 oz/ 90 g) superfine sugar, 3/4cup (3 oz/ 90 g) self-rising flour
4 tablespoons strawberry jam, sieved
1 cup whipping cream
superfine sugar to taste
1 2/3 cups fresh strawberries
tiny edible flower to garnish, if desired
In top of a double boiler or a bowl set over a saucepan of simmering water, melt chocolate, stirring until smooth. Cool slightly. Spread melted chocolate on waxed paper to a 15-inch square. Let stand at room temperature until set. Cut chocolate in 100 (1-1/2-inch) squares.
Prepare cake according to recipe. Bake in an 8-inch square pan and cool. Cut cake in 16 (1-1/2-inch) squares, trimming as necessary. Reserve remainder for another use. In a small saucepan, warm jam slightly, then brush jam lightly all over cake squares. Place each cake square on a chocolate square. Press 4 more chocolate squares around sides.
In a bowl, whip cream to stiff peaks and sweeten with sugar. Slice strawberries, if desired. Carefully spoon whipped cream on top of each box, then cover with strawberries. Place a chocolate square on top of each box to make a lid. Chill and serve within 1 to 2 hours. Garnish with tiny flowers, if desired.
Makes 16 boxes.

Line Lifter
To get wrinkles out of silk, wool and rayon clothes that can't take direct
heat, place a piece of foil on your ironing board, then lay the garment flat
over it. With the steam button down, pass the iron three to four inches over
the fabric several times. Wet heat radiating from the foil helps smooth out
wrinkles.
2) Clear Signal
If your DVD player is stacked on top of the TV (or vice versa) and the
picture is fuzzy, the two electromagnetic fields may be commingling, confusing the

St Pats. Days Around The Corner
Classic Corned Beef and Cabbage Dinner
Corned beef dinner with rutabagas, carrots, onions, potatoes, and cabbage.
INGREDIENTS:
1 corned beef brisket, about 4 pounds
1 small bay leaf
6 peppercorns
2 to 3 rutabagas, cut in chunks
1 pound carrots, or about 8 to 10, trimmed, scraped, and left whole
12 small whole onions, peeled
6 medium potatoes, peeled
1 medium head of cabbage, cut in wedges
PREPARATION:
Place meat in a deep stock pot or kettle; cover with water. Add bay leaf and peppercorns. Bring to a boil; skim off foam. Reduce heat, cover, and simmer for 3 hours. Add vegetables; simmer for about 45 minutes longer, or until vegetables and meat are tender.
Serve corned beef surrounded with vegetables.
Corned beef dinner serves 8 to 10
Irish Stew
Servings: 6
2 tb Oil
4 lg Onion cut in wedges
5 lg Carrots cut in thick slices
1 1/2 lb Round steak or lamb
6 lg Potatoes
1 c Water
Salt and pepper to taste
Heat oil in large saucepan or skillet. Saute onions in oil. Add carrots and cook for a few minutes. Cut steak into 1/4 to 1/2 inch cubes and add to onions & carrots. Wash, peel and slice potatoes and add to pot. Pour in water, season to taste with sat & pepper and bring to a boil. Skim of any foam, reduce heat and simmmer over low heat until meat and vegetables are tender. If desired, stew can be thickened by mixing 2 tablespoon flour with a little water and adding it to the stew. Heat through until thickened and serve piping hot.
Irish Coffee
1/2 ounce Irish Whiskey
1/2 ounce rum
1/2 tsp sugar
Strong dripped coffee
Whipped cream
Freshley shredded coconut
Per Irish whiskey mug: Stir whiskey, rum and sugar in the bottom of
the cup until sugar is dissolved. Fill with coffee. Top with whipped
cream and fresh shredded coconut. If preparing for a crowd, mix
proportional amounts of whiskey, rum and sugar ahead of time.
Irish Stew: (Ballymaloe)
Serving for 4:
a.. 3 lb's lamb neck chop's.
a.. 4 med-size carrots.
a.. 4 med-size onions.
a.. 1 Tbs butter.
a.. 1. 1/2 cup of lamb fat,or beef dripings.
a.. 4 med-size potatoes.
a.. Salt and Pepper to taste.
a.. 2 1/2 cups stock,or water.
a.. 1 tbs choped parsley.
a.. 1 tbs choped chives.
a.. Follow these mixing and cooking rules:
a.. Shred some of the lamb fat and render in down in a heavy
casserole.
a. Peel onions and pot atoes, scrape carrots.
nbsp; a.. Cut the meat into 8 pieces, only the excess fat is cut away.
a.. Bones need not be removed.
a.. Cut the carrots and onions in quarters.
a.. Toss meat in fat until color changes and repeat with onions and
carrots.
a.. Add stock and season carefully.
a.. Put whole potatoes on top.
a.. Simmer gently, until the meat is cooked, 2 hours approx.
a.. Pour off the cooking liquid.
a.. Degrease and reheat in another saucepan.
a.. Check seasoning. Then swirl in butter, chives, parsley and pour
back over stew.
Irish Omelet
This is serving for two so, if your family is larger adjust accordingly:
a.. 6 small eggs. (or 4 large eggs)
a.. 2 large potatoes mashed.
a.. 1 teaspoon squeezed lemon juice.
a.. 1 tbs chopped chives or scallions.
a.. 1 tps each salt and pepper.
1 tbs butter.
Follow this cooking:
Separate the eggs and beat the yolks: add to the mashed potatoes, mixing
thouroughly, then add the lemon juice, chives and salt and pepper.
Melt the butter in the omelette pan.
Whisk the egg whites until stiff and stir them into the potato mixture.
Cook the mixture until golden, then run under the broiler to finish and
puff it up.
Serve at once.
CHOCOLATE IRISH TIPSY CAKE

INGREDIENTS:
1 package chocolate cake mix
1 (3-4-ounce) package instant chocolate pudding mix
3/4 cup Irish whiskey or bourbon, divided
1/2 cup cooking oil
4 jumbo or extra large eggs, at room temperature
3/4 cup sugar
1/4 cup butter or margarine
1/4 cup water
1 teaspoon lemon juice
whipped cream for garnish
DIRECTIONS:
In a large bowl, combine cake mix, pudding mix, 1/2 cup Irish whiskey, and oil, add eggs and beat at medium speed of an electric mixer for 4 minutes, scraping down sides of bowl as necessary.
Spoon into a greased and floured 10-inch bundt or tube pan. Bake in a preheated moderate oven (350 degrees) for 45 minutes, or until a cake tester inserted into the cake comes out clean. When cake is almost done, prepare syrup.
Combine sugar, butter, water, and lemon juice in a small heavy saucepan.
Bring to a boil slowly, stirring until sugar is dissolved.
Remove from heat and stir in remaining 1/4 cup Irish whiskey or bourbon.
Turn cake out onto two large sheets of aluminum foil placed together to form the shape of a cross. Let cake cool for 10 minutes, top side up for tube cake and upside down for bundt cake.
Using a skewer or long bamboo pick, make holes all over top and sides of hot cake. Drizzle syrup very slowly over cake, being careful that too much does not run into any cracks on top of cake.
Bring foil up around cake and wrap securely. Cake may be served when completely cool, or store in an airtight container overnight. Cake may be wrapped securely in foil and stored in the refrigerator for several weeks or in a freezer for up to six months. Serve with whipped cream.
Yield: 1 10-inch tube cake

Skillet Barbecued Pork
1/3 cup honey
1/3 cup barbecue sauce
1/3 cup Itali dressing
1 teaspoon chili powder
4 boneless pork chops, 1/2 inch thick (about 1 pound)
In a large resealable plastic storage bag, combine the honey, barbecue sauce, Italian dressing, and chili powder; mix well.
Add the pork chops to the marinade; seal bag, shake to coat the meat well then refrigerate for 30 to 60 minutes.
In a large skillet, cook the pork chops with the sauce mixture over medium-high heat for 3 to 4 minutes per side, or until no pink remains.
Serve topped with the sauce.

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
In a food processor, combine graham crackers, 2 tablespoons sugar, butter and cinnamon.
Pulse until smooth.
Press into the bottom of an 8x12 inch baking dish.
In the food processor, combine cream cheese, 1 cup sugar, eggs and vanilla.
aProcess until smooth.
Pour over crust.
Bake in preheated oven for 25 to 30 minutes, or until filling is set.
Allow to cool for 2 hours.

Here's my favourite recipe...
TUNA CASSEROLE
Ingredients: 1x 450g tin tuna (in springwater or brine, NOT OIL)
1 1/2 cups pasta (small shells or macaroni are good)
1 cup grated cheese
1 cup water (use water or brine from tin)
1/2 cup milk
2 tablespoons plain flour
2 tablespoons butter/marg
1 pkt of Continental tomato and vegetable soup (I'm not sure if this is still available everywhere (it's not here) so I use Continental thick vegetable soup and add tomato sauce to taste!)
Method: Cook pasta and drain
Melt butter
Put flour in a mixing bowl and add melted butter, water, milk and soup
Add tuna (and tomato sause to taste)
Place in an oven proof dish and cover with pasta and cheese
Cook (with lid on) in oven at 180 degrees for 30 - 35 minutes
This is soooo YUMMY!

Jelly Slice
1pkt Crushed Marie Biscuits
6oz, melted Butter.
Mix together and press in slice tin.
Filling:
1 tin of condensed milk, Juice of 2 lemons, 1 dessertspoon of gelatine dissolved in 3/4 cup of hot water. Pour over base and set in fridge. Make a jelly of your choice, when cool pour over base mixture and let set.
`Caramel Slice
4oz Butter
3/4 cup sugar
1 Egg
1 1/2 cups plain Flour
1 Teas Cocoa
1 Teas Baking powder
Cream butter and sugar, add egg, then dry ingredients. Press into slice tray, and cook in mod. oven for 20 minutes.
Topping:
1/2 cup of condensed milk, 2 tablespoons of butter, 1/2 cup Sugar, 1 Tablespoon of Golden Syrup.
Boil together for 5-6 minutes. When cool spread over base.
Ice with chocolate Icing. I melt Cadburys Dairy Milk chocolate for mine.:w7:

Build fire in backyard to heat kettle of rain water. Set tubs so smoke wont blow in eyes if wind is pert. Shave one hole cake of lie soap in boilin water.
Sort things, make 3 piles
1 pile white,
1 pile colored,
1 pile work britches and rags.
To make starch, stir flour in cool water to smooth, then thin down with boiling water.
Take white things, rub dirty spots on board, scrub hard, and boil, then rub colored don't boil just wrench and starch.
Take things out of kettle with broom stick handle, then wrench, and starch.
Hang old rags on fence.
Spread tea towels on grass.
Pore wrench water in flower bed. Scrub porch with hot soapy water. Turn tubs upside down.
Go put on clean dress, smooth hair with hair combs. Brew cup of tea, sit and rock a spell and count your blessings.

For those who like to make homemade sauces.
Worcestershire Sauce
6 quarts of vinegar, (12 pints)
juice of 3 lemons
12 cloves
6 teaspoons cayenne pepper
4 dozen chillies
3 2lb tins Treacle
4 oz garlic
4 tablespoons COMMON SALT
Crush or mince garlic. Boil together together all the ingredients for 1 1/2 hours. Strain through Muslin. Bottle (in glass) Cork when cold. Leave to mature for at least 6 weeks, 6 months is better and 1 year is best of all. The recipe maybe halved..

I believe these are common uses on Vodka in Russia.

Golden Syrup Pudding
20g Butter
1 Cup S.R.Flour
1/4 teaspoon Salt.
1/3 Cup Milk.
Golden Syrup
Mix all the above together.. will resemble a scone dough. Roll out to about 1/2 cm thickness and spread with golden syrup,.. be generous. Roll dough up and seal ends. Place in an oblong casserole dish or similar with high sides.
Sauce.
300ml Boiling Water.
2 Tablespoons of Golden Syrup.
Mix together and pour over dough roll.
Cook at 200-220 degrees for about 20 minutes or till dough is golden brown
Quick and Easy and Nice with Whipped Cream
Serves 4

Puffed Pizza Casserole
Ingredients:
1 pound ground chuck
1 medium onion, diced
2 cups spaghetti or pizza sauce
1 cup flour
1/2 tsp. salt
1 cup milk
3 eggs
1 cup shredded mozzarella or Italian blend
Parmesan Cheese
Brown meat and onion-drain. Add sauce. Simmer
for 10 minutes.Spoon hot sauce into a greased 9x13
pan. Sprinkle cheese on top. Put in oven to keep
warm. In a bowl beat eggs and milk until frothy. Add
flour and salt, then beat until smooth. Pour over hot
meat mixture, sprinkle with Parmesan cheese and
bake at 400 degrees for 30 minutes until dough is
puffed and up and browned.

ZIPLOC OMELETS
This works great !!! Good when you're alone or when all your family is
together. Best feature is that no one has to wait for their special
omelet !!! Have guests write their name on a quart-size Ziploc freezer bag with
Permanent marker.
- Crack 2 eggs into the quart size Ziploc bag (not more than 2) shake to
combine them.
- Put out a variety of ingredients such as: cheeses, ham, onion, green
pepper, tomato, hash browns, salsa, etc.
- Each guest adds prepared ingredients of choice to their bag and shake.
- Make sure to get the air out of the bag and zip it up.
- Place the bags into rolling, boiling water for exactly 13 minutes.
You can usually cook 6-8 omelets in a large pot. For more, make another pot of
boiling water.
- Cut the bags and the omelet will roll out easily. Be prepared for
everyone to be amazed.
Nice to serve with fresh fruit and coffee cake; everyone gets involved
In the process and a great conversation piece.
Imagine having these ready the night before, and putting the bag in
Boiling water while you get ready. And in 13 minutes, you have a nice omelet

Camping Recipes -BAKED STUFFED FISH

White fish; enough for
-4-6 servings
2 c Soft bread cubes;about
-1/2" cubes
1 Small onion; chopped
-fine
1 Green pepper; blanched
-and chopped
8 oz Imitation crabmeat
1/4 c Lemon juice
1/2 c HELLMANS mayo
Salt & pepper to taste
Mix all these ingredients together and roll up in fish fillets,
securing them with toothpicks. Divide it among four or five
good-sized pieces. Bake at 400 for 30 minutes. During last 10 minutes
pour newburg sauce over fish.
It's good with flounder, but any white fish will do. I've used large
cod and catfish fillets and butterflied them. Just enough so you can
roll it up over the stuffing.

Mini marshmallows
Chocolate chips
Raisins (optional)
Partially peel banana. Cut wedge-shaped section in banana. Remove
wedge. Place in hollow: marshmallows, chocolate, and raisins. Cover
mixture with banana peel and wrap in foil. Place in coals for about 5
minutes, until chocolate and marshmallows are melted.

Camping Recipes -Burgers in Foil

Yield: 4 Servings
1.00 .to 1 1/2 lb ground beef
4.00 16-inch squares aluminum
. foil
4.00 Carrots; sliced
1.00 cn Potatoes; 16oz, sliced
2.00 sm Green bell peppers; chopped
Dehydrated onion flakes
Worcestershire sauce
Salt & pepper to taste
Separate meat into 4 portions. Place each in the center of a square
of
foil. Top with equal portions of chopped carrots, potatoes and
peppers. Season with dehydrated onions, Worcestershire sauce, salt
and pepper to taste. Seal foil, checking for leaks. Place on hot
coals for 10 to 15 minutes per side.
Makes 4 servings.
Nutritional analysis: per serving: 389 calories, 22g fat, 548mg
sodium, 95mg cholesterol, 52% of calories from fat.

2.00 pk Onion Soup Mix
1.50 lb Ground Meat Or Sausage
Assorted Seasonings To
Taste
1.00 lg Pot With A Lid
1.00 lg Spoon
6.00 c Water
Brown the meat in the bottom of the pan. Break up the meat as it
cooks assuring that all the pink (raw) meat is cooked. Add the water
and soup mix stiring to mix. Heat to boiling and simmer a few
minutes. Add the dry potatoes and stir to mix. Cover the pot and
move to the edge of the fire for about 10 minutes to allow the
potatoes to swell up with thewater. Move the pot back on the heat and
stir while cooking the potatoes. cook about 5-10 minutes. Serve hot.
Seasonings may be added with the potatoes to the cooks taste. Hot
peppers, chili powder, basil, italian seasonings are good. The meat
may be hamburger, sausage, italian sausage, etc. Different meats do
provide a different flavor. This hashcan be either a evening or
breakfast meal.
Note that a package of Golden Grill Hash Brown dried potatoes
provides for three recipes of Camp Hash.

1 pound pasta -- any kind
1 package spagetti sauce mix
1 can tomato paste
1 pound lean hamburger -- ground turkey
or italian sausage
2 pots
2 stiring spoons
1 lid
potholders or gloves
Heat water to a boil in a large pot. In a smaller pot cook the meat and
add the sauce mix, water, and tomato paste according to the instructions
on the sauce package. Cook the pasta in the water for 8-10 minutes.
Place the lid on the pot and with gloves or pot holders drain the water
from the pasta through the crack between the lid and the pot. Putting the
pot on a stump or log and letting the stump or log hold the weight of the
pot helps. Mix the sauce with the drained pasta and serve . Grated
cheese may be used with the pasta. Pasta notes: Spagetti is the
traditional pasta, but wheels, or other forms that are more compact and
larger will be much easier to drain.

Pesto Gnocchi
1 onion diced
100 grams prosciutto cut into strips
1 300g (approx) bag of gnocchi- or make your own)
300ml of cream
3 tblsn sundried tomato pesto.
cook gnocchi to directions, while thats cooking fry up onion and prosciutto ( till crispy), add cream, pesto bring to boil, throw in drained gnocchi, heat altogther.. enjoy.

My Christmas Cake Recipe
Ingredients:
1 cup of water
1 cup of sugar
1 tsp. salt
1 cup of brown sugar
lemon juice
4 large eggs
nuts
1 bottle Vodka
2 cups of dried fruit
Sample the vodka to check quality.
Take a large bowl, check the vodka again.
To be sure it is of the highest quality, pour one level cup and drink.
Repeat .
Turn on the electric mixer.
Beat one cup of butter in a large fluffy bowl.
Add one teaspoon of sugar.
Beat again.
At this point it's best to make sure the vodka is shtill OK.
Turn off the mixerer.
Break 2 legs and add to the bowl and chuck in the cup of dried fruit.
Pick fruit off floor.
Mix on the turner.
If the fried druit gets stuck in the beaterers you can pry it loose with a drewscriver.
Sample the vodka to check for tonsisticity.
Next, sift two cups of salt
Check the vodka.
Now shift the lemon juice and shtrain ya nuts.
Add one table.
Add a spoon of sugar, or whatever it is that's left
Grease the oven.
Turn the cake tin 360 degrees
Don't forget to beat off the turner.
Finally, fish the vodka and............................

Interesting additive I was told, instead of filling cream puffs with cream ..Make up a pkt of Vanilla pudding.. when set fill with that.

Cappuccino Cooler
1 1/2 cups cold coffee
1 1/2 cups chocolate ice cream
1/4 cup chocolate syrup
crushed ice
1 cup whipped cream
In a blender, combine coffee, ice cream and chocolate syrup. Blend until smooth. Pour over crushed ice. Garnish with a dollop of whipped cream and serve.
May be fattening but it sure sounds good:hyper:

Easy Mock Chicken Kiev
Chicken pieces
Flour
Egg
Breadcrumbs
1-2 tablespoons of Garlic Butter
Coat chicken with flour then egg and roll in breadcrumbs
Melt garlic butter in non stick frypan.
Make sure you place chicken pieces on base dont stack or coating wont crisp.
Cover and cook on medium heat
Its a quick meal,easy and so yummy
But
Make sure you have a supply of PK

This recipe is from my son's Yr 7 Home Economics Class:
Take a long bread roll,
Cut it almost in half so that there
Is just a fraction of bread keeping it together.
Next take a Thin Frankfurt and place in tepid water,
Bring the water to the boil and then simmer for a few mins.
Drain Frankfurt, after it is cooked,
Then garnish with your favourite condiment (mine is Corn Relish),
Then top with a handful of grated Cheese (preferably Tasty),
PRESTO, you now have a righteous HOT-DOG,
With all the trimmings.

Chicken Soup With Dumplings
2 Tbs butter
1 small onion, minced
9 cups chicken stock
Salt
Freshly ground white pepper
1/2 tsp thyme
Pinch freshly ground nutmeg
1 cup favorite flour
2 eggs
In a large saucepan, melt the butter. Add the onion and cook over moderate heat until softened, about 3 minutes. Stir in 8 cups of the chicken stock and bring to a simmer. Season with salt and white pepper to taste.
Meanwhile, in a medium saucepan, combine the remaining 1 cup stock with the thyme, nutmeg, 1/2 teaspoon salt and a pinch of white pepper. Bring to a boil over high heat. Remove from the heat and beat in the flour until thoroughly blended. Let the mixture cool slightly, then beat in the eggs, one at a time.
Drop tablespoons of the dumpling mixture into the simmering soup and cook until the dumplings begin to firm, about 5 minutes. Remove from the ! heat, cover the
saucepan and set aside to steam the dumplings for 3 minutes before serving.

10 Eggs
1/2 Level teaspoon salt
275 g Sugar
4 dl Cognac
1 1/2 level teaspoons vanilla
-essence (extract, I think)
Separate the eggs and beat the yolks with the salt and the sugar, until the
mixture is thick and creamy. Beat in the cognac, very slowly and put the
mixture into a double saucepan. Heat gently, whisking all the time until
the advocaat is warm (not hot) and thick. Remove the pan from the heat and
stir in the vanilla essence. Pour into a jug. Advocaat is served in a glass
and eaten with a teaspoon. It can also be topped with whipped cream.

Dutch Apple Cake
Ingredients:
• 3/4 cup margarine
• 1 cup sugar
• 1/2 cup brown sugar
• 2 eggs
• 1 cup buttermilk
• 1 tsp. soda
• 1 tsp. baking powder
• 1 tsp. cinnamon
• 1/2 tsp. salt
• 2 1/2 cups flour
• 2 cups diced apples
•
• Topping:
• 3/4 cup sugar
• 1 tsp. cinnamon
• 1/2 cup chopped nuts
Method:
Cream butter and sugars well; add eggs and buttermilk. Sift flour, soda, salt, baking powder, cinnamon, and flour together. Mix into creamy mixture. Stir in diced apples. Pour batter into a greased and floured jelly roll pan. Topping: Mix together and sprinkle over cake batter. Bake at 350 for 25 to 30 minutes.

Hubby Pie
Can be prepared 20 years ahead.
Ingredients
Crust:
1 hard-skinned hubby
1 comfortable sofa
Filling:
1 TV remote control
6 pack of beer
1 packet chips (crisps)
1 family size pizza
1 large serve nacho
1 melted cheese sandwich
15 years patience
Lifetime of loving care
1 ounce of resignation
Method:
Cram one thick-skinned hubby into a well worn greased and comfortable sofa and leave to set (probably will take length of one sport show), remove from family room and bring to kitchen to finish filling.
Mix TV remote control, chip packet, pizza, hotdog, nachos and cheese sandwich on a large tray. Add six pack of beer slowly (to avoid excess gas), bind with a lot of patience, loving care and resignation. Be careful to place hubby and filling carefully back in front of the TV so as not to disturb the view of the screen and leave to solidify indefinitely.
Head back to your computer and have a marvellous time chatting with your online friends UNDISTURBED!!! (Or, go SHOPPING!)

Raspberry Cheesecake
250g Marie Biscuits.
125g Melted Butter
1/2 Cup Water
1 Tblsp Gelatine
250g Philly Cheese.
3/4 Cup Sugar
300ml Whipped Cream
1Tblsp Lemon Juice
1/2 cup Raspberries
1Tbspn Cornflour
1Tblsp Sugar
1.Crush biscuits, add melted butter.. press into spring form tin and refrigerate.
2. Beat cream cheese, sugar and lemon juice until smooth. Sprinkle gelatine over water, dissolve and cool. Add to cream cheese mixture, beat well,then fold in whipped cream. [I added 1 dessertspoon of raspberry jelly crystals to the cream for colour]
3.Drain raspberries and keep the juice. Spoon half the mixture into the crust add raspberries and add rest of the mixture.
refrigerate..
4. Place sugar, cornflour and juice[ if not 3/4 cup add water to make up the difference]into saucepan and bring to boil stirring briskly.
5.Spread over cheesecake and swirl through if desired.

Gingerbread Martini

1 shot hazelnut-flavored liqueur (recommended: Frangelico)
1/2 shot butterscotch schnapps
Ice cubes
4 ounces ginger beer
Float dark rum
Gingerbread man cookie , for garnish
Pour first 3 ingredients into a cocktail shaker filled with ice. Shake well. Strain into high ball glass or any 8-ounce glass filled with ice. Top with ginger beer. Pour a little dark rum over the back of a spoon and float on top of the ginger beer. Garnish with a gingerbread man cookie.

Meringue
8 Egg whites
500g Castor Sugar
2 Tbl Cornflour
4 Teas. White Vinegar
Pinch of Salt
2 Teas. Vanilla
Beat eggs still forming peaks add sugar slowly then cornflour, salt and drizzle vinegar down the side of the mixing bowl and blend.
Cook at 150 degrees for 1hr 15minutes. Open door and leave to cool
Whip 600ml cream and add 250g of cooled melted chocloate.
[I used cadburys not the cooking variety]
If the meringue hasn't dropped in the middle, remove top crust, as I have and fill with cream mixture.[I didnt use cream on the outside]
Then drizzle remaining chocolate over the top.
It isnt sickly like the usual meringue after one piece, nor does it go watery or soft by the next day.
This was made xmas eve and remains were still perfect boxing day night.
